We are big fans of all things chicken, so add in fresh, organic vegetables, hummus or greek yogurt and we are so there!
Organic Mediterranean Chicken Pita
Ingredients
- 2 Large Organic Chicken Breasts
- 8 Toufayan Whole Wheat Pitas
- ¼ Organic Chopped Red Onion
- 10 Organic Grape Tomatoes
- Tribe Roasted Garlic Hummus
- ½ Cup Organic Valley Feta Cheese
- 1 ½ Cup Wallaby Organic Greek Yogurt
- 1 tbsp. Organic Lemon
- ½ Cucumber
- 2 Branches Dill
- ¼ Organic Chopped Red Onion
- 1 tsp. Simply Organic Garlic Powder
- 1 tsp. Simply Organic Onion Powder
- 1 tsp. Salt
- 1 tsp. Pepper
Pita Filling

Tzatziki Sauce
Instructions
- Boil 2 inches water in large pan. Add 2 large organic chicken breasts. Cook on high until water is halfway evaporated. Turn heat on medium to low. Brown and remove. Let cool. (Please note: poaching 2 large breasts of chicken will take approximately 20 minutes.)
- While chicken is cooking or cooling, chop red onion and grape tomatoes into small pieces. Break feta cheese into small clumps.
- Tear chicken into small pieces.
- Spread hummus inside pita pocket, add chicken, onion, tomato, feta cheese and tzatziki (see recipe below). Grab and ENJOY!!!
- Slice lemon in half.
- Chop cucumber and red onion into small pieces.
- Break small dill pieces from branch.
- Add greek yogurt, lemon, cucumber, red onion, dill, garlic powder, onion powder, salter, and pepper to medium mixing bowl. Stir well.
