Good Eatin Recipe Hop | Deluxe Chicken Salad

There is a local cafe that serves a to-die-for Chicken Salad with grapes and pecans on a flaky, buttery croissant.  Every chance I get to eat there, I order this chicken salad and I am now on a quest to recreate their recipe.  This is the first recipe that I found, so join me on my journey to find the perfect deluxe chicken salad recipe.

Deluxe Chicken Salad

Ingredients

  • Ingredients:
  • 1/2 cup light or regular mayonnaise
  • 1/2 cup light or regular sour cream
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 pounds skinned and boned chicken breasts, cooked and chopped
  • 3 cups red and white seedless grapes, halved
  • 1 cup chopped pecans, toasted
  • Lettuce leaves (optional)

Instructions

  1. In a large bowl, add the mayonnaise, sour cream, lemon juice and salt and pepper. Stir the mixture together.
  2. Add the chopped chicken and grapes to the mayonnaise mixture and toss gently to coat.
  3. Cover the bowl with plastic wrap and place it into the refrigerator to chill for at least one hour.
  4. Just before serving, stir in the toasted pecans. Serve on a fresh croissant or for a healthier version, over a few leaves of lettuce.

    I love your recipes especially the ones under your Recipe Hop. I have tried a few of these at home and they were delicious. I am determined to try all of these. This one sounds so yummy!! I already love salads so this will be great for me to try. Thanks for sharing more of your great recipes. i cannot wait until you post more!! 🙂

    Yummy! I’ve seen a chicken salad with grapes at Whole Foods, and it sells like hotcakes! I would love to try this, everything in it sounds great – and pecans are often on sale right now with the holidays, good time to make this.
